Created in 1910 by pastry chef Louis Durant from Pâtisserie Durant, it was made to commemorate the bicycle race that runs from the french capital Paris to Brest. This wheel shaped pastry is traditionally made of pâte à choux pastry and filled with a hazelnut praline mousseline cream. We've taken this classic and put a twist on it by making it with a pistachio praline mousseline cream.
